A glance at Extrusion Technology
Extrusion technique is a process in food processing technology that combines several unit operations including mixing, cooking, kneading, shearing, shaping, and forming. It is a process by which we force a set of mixed ingredients through an opening in a perforated plate or die with a design specific to the food and then cut it to a specified size by blades. The mixture is forced through the die, by a machine known as an extruder, and the mix is known as the extrudate.
The most widely used Extruder is a twin-screw extruder with a Die Head. It cools the extruded protein from the vegetables or other plant sources. It then flows in a long flow channel. The cooling solidifies the protein in such a way that the resulting texture is almost identical to that of conventional meat. Hence, it generates the desires of fiber structure from plant protein.
